The Best Phở for a Cold Winter Night

So much for running away from the blistering cold that has hit Kentucky. This snowstorm will not go away. The snow is still on the ground and will remain there if these low temperatures persist. So I did what any girl who HATES the cold would do. I flew to Florida with Hubbie in hopes of being greeted with sunshine and sweaty afternoons, but nooooo. We arrived, and I instantly regretted not packing a coat.

It was 38 degrees in Boynton, Florida, this morning. CHILLY. When I went to turn the heat on, I was surprised to find out that there was no heat setting on the thermostat. Wierd. So we asked around, and apparently that is the norm here in Florida, well, for obvious reasons. It doesn’t get cold. That means we will have to brave these “cool” temperatures with a smile because I could be home in a pile of snow with an icy, long mile-long driveway, slipping and sliding every time I want to go see my sister.

On a brighter note, I have been here in Southern Florida for 2 days and have already eaten at 4 delicious spots. I just love the city; there are so many options to choose from, and how can you be bored, not to mention all the unique individuals? You can just sit at a restaurant and listen to everyone going on about their lives, and you soon find yourself to be one of them, talking like no one can hear you, going on about how you miss your dog that passed away two years ago.

Last night, we went to a small Vietnamese restaurant that served Pho. There were like ten tables all against the wall and a path toward the back where the kitchen and register were. We walked into the place, which was full, with only one table open, so we sat down and watched how people just kept coming in and waiting. Just when I thought they would leave, a table opened up for them, and they sat down like magic.

It had that small, mom-and-pop-shop feeling. I can only assume the older man and his wife were the owners, as they were welcoming in all the customers and running most of the restaurant. A woman came over to take our order and later brought us a large bottle of water for the table and a can of Coke Zero. The little charming glassware was used, which gave you the sense of eating at home. It was just cozy and unassuming.

We ordered the spring rolls as an appetizer at the last minute. They were a good size and packed with veggies, pork, shrimp, and noodles. The peanut sauce that accompanied it wasn’t overly sweet, which kept the food tasting fresh and healthy. We ordered the Pho Special-Large, which is made with eye round steak, brisket, soft tendon, and meatball.

The bowl of Pho was huge and warm, exactly what we needed on such a chilly Florida night. As new customers kept coming in, so did the cold Florida breeze. I just moved a little closer to my honey and lay my leg over his and sipped on the delicious hot broth. Mmm, so good.

They kindly packed up our leftovers. We paid our bill, got up, and left. As we passed the line of people at the door, we saw another couple take our place. Magic.
